Easy Courgette & Feta Fritters

Summer comes and the courgette plants produce more courgettes than you can eat?
Here is a basic recipe for a summary light vegetarian dish that will take some courgettes out of your garden and transfer them to the kitchen, and into your belly.
These fritters are super easy to make, they are gluten free and relatively high in protein and low on carbs thanks to the cheese, egg and chickpea flour.
Tip: Grate and mix the ingredients directly in the same bowl.
For about 15 fritters, you will need:
- 1 large (store size) courgette or 2 small garden courgettes
- 100 gr Feta cheese
- 1 medium size egg
- ½ cup of chickpea flour
- Oil for frying (such as sunflower oil), if you use a good no-stick pan, about 2 tbsp should be enough, no need to deep fry.
Method:
Grate the courgette(s) on a grater, when you are done, grate the feta cheese too. If the cheese breaks and crumbles that’s absolutely fine, as long as you are not left with big chunks of cheese.
Combine a beaten egg and mix, then add the flour and mix all ingredients well.
Courgettes can release a lot of liquid when grated, this is why it is best to fry the mixture right away. If for some reason the mixture is too wet, add more flour as needed.
Spoon the mixture and fry in a medium hot pan with oil. Turn the fritters so they will get brown on both sides, it only takes a few minutes.
Eat when ready, or keep in an airtight box in the fridge.
Extras:
This is the basic recipe which will give you nice tasting fritters which kids will enjoy as well. Here are some ideas for variations-
Add extra flavour:
-A handful of herbs from the garden: chopped mint, parsley or chives.
-If you are using parsley, try adding 1 tbsp of turmeric and a pinch of salt (remember, the cheese is pretty salty). The fritters will become a bit spicy and have a great yellow colour.
-Chopped pitted olives.
-Chopped sun dried tomatoes.
Serve with:
-Tzatziki (Greek yogurt, black pepper, salt, garlic and finely grated cucumber). Plain yogurt is also a good addition to the fritters.
-Fresh tomato salad made of finely chopped tomatoes and onion with olive oil and salt.
-Marinated olives.
-Tahini (sesame paste, water, lemon juice, crushed garlic clove and salt).
-The fritters are great inside a tortilla wrap with dips and salads from the list, and some fresh salad leaves of your choice.
